Ingredients:
- 1 cup basmati rice or other long grain rice, rinsed
- 2 tbsp ghee (clarified butter)
- 1 tsp cumin seeds
- 2 cloves garlic, minced
- 1 inch ginger, grated or minced
- 2 green chilies, sliced (optional)
- 1/4 cup cashews or peanuts (optional)
- 2 cups water or vegetable broth
- 1 tsp salt (or to taste)
- 2 tbsp chopped cilantro for garnish
Instructions:
1. In a pot or pan, heat the ghee over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
2. Add the garlic, ginger, green chilies (if using) and cashews/peanuts (if using). Sauté for 1 minute until aromatic.
3. Add the rinsed rice and toss to coat with the ghee and spice mixture for 2 minutes.
4. Pour in the water/broth and salt. Give it a stir.
5. Bring to a boil, then reduce heat to low, cover and simmer for 12-15 minutes until rice is cooked through and liquid is absorbed.
6. Remove from heat and let stand covered for 5 minutes. Fluff with a fork.
7. Garnish with chopped cilantro and serve hot with raita, dal or curry of choice.
The ghee gives the rice a wonderfully rich, nutty flavor. You can customize by adding other spices like cinnamon, cloves, cardamom or sautéed veggies. This fragrant ghee rice makes a comforting side or even a meal on its own. Enjoy!
